Turkey, Sweet Potato Weeknight Skillet


I wanted to share a healthy, quick & easy weeknight skillet dish that I tried for the first time tonight.

List of Ingredients:

Ground turkey

Two medium-sized sweet potatoes

One yellow bell pepper


White onion

Mozzarella cheese

Once you gather all the ingredients, grab your skillet and heat olive oil on medium heat.

Toss in the ground turkey and garlic. Disclaimer: I just used garlic powder.

While the turkey is browning, chop up about half of the onion and the the whole pepper. Toss them into the skillet, stirring occasionally. Season with red chili flakes, salt, and pepper.

Next, cube your sweet potatoes. Note: I par-cook the potatoes in the microwave for five minutes prior to cubing. Add to skillet.

Cover and cook for ten minutes. Test potatoes to ensure they are soft, then spread the mozzarella cheese on top. You can either cover with the lid on low heat, or throw the whole skillet into to oven at 400 degrees. I just covered on the stove stop.

Once cheese is melted, scoop and serve. I added an extra pinch of red pepper flakes and some parmesan. Because, cheese.
