Energy Bites

Hi there! It’s Sunday, and I’m up to my usual cleaning and baking. Yes, I’m still on a muffin kick. It’s rainy and cold (boo, hiss) here, so I was feeling pumpkin muffins again this week. Justin wasn’t too upset about my choice, considering he licked the whisks and bowl clean.

Anyway, today I’m sharing my energy bites recipe with you all. It’s super easy and they last throughout the week. They are a great, quick breakfast you can grab as you run out the door.

You will need the following:

  • 1 cup Quick Oats
  • 2/3 cup creamy peanut butter
  • 1/2 cup flaxseed meal
  • 2 tablespoons honey
  • 1/2 cup dark chocolate morsels

Mix all together in bowl (using your clean hands is easiest) and roll into balls. I refrigerate the “batter” before I roll to make it easier. Keep refrigerated once rolled. Grab and go every morning!
