Protein Pumpkin Muffins

The cooler temps and the Browns pre-season game tonight are giving me all the Fall feels, which also got me thinking about the upcoming season of pumpkin-everything.

I thought it appropriate to dig into my go-to Fall recipe: pumpkin muffins. Though I love my pumpkin muffins like the basic b*tch in me loves all things Fall – I didn’t want the empty calorie snack making me feel guilty (cue postpartum baby weight hanging around).

So, I made my own little concoction and it actually turned out alright!

See ingredients below!


1.5 cups Kodiak Cake (buttermilk) mix

1 egg

1/2 cup pure pumpkin (1 can)

1 TBSP vanilla

Splash of almond milk

2 “shakes” of cinnamon

1 “shake” of pumpkin pie spice

Mix all together and bake at 350 degrees for 20 minutes


Since these are protein based, they do lack a little sweetness. I mixed powdered sugar and cinnamon and “sprinkled” it on top. NOTE: Will work better with a sifter. I just used a spoon because I’m lazy.
